🦎 How To Clean Cast Iron Pan Before First Use
Don’t forget to scrub the sides, the handle, and the bottom. Make sure your pan is clean and completely dry. You can use a dish towel and dry the pan thoroughly. Sometimes putting your cast iron on the stove and heating it until all of the water evaporates is the best way to ensure it’s completely dry.
After wetting your pan, thoroughly scrub your pan inside and out with your scrubbers until all rust and other cooking residue is removed. If needed, it’s okay to use dish soap during this process because you will be re-seasoning your pan next. After your cast iron is thoroughly cleaned, preheat your oven to 325° F.
After you’ve used your skillet, use a sponge to scrub it with water. But don’t let it soak in water, as this can cause rusting. If it still needs a bit more attention, add some kosher salt to the pan and scrub with a damp sponge. The salt acts an abrasive cleaner without disturbing the seasoning.

If the bottom of the skillet has a layer of caked-on food, make a mixture of coarse salt and vinegar and use a paper towel to rub it around the bottom of the skillet. Option 1: If the rust is REALLY stubborn, put the skillet in the oven on the self-clean cycle. This will strip everything from the pan and give you a blank slate to reseason. Then wash with hot soapy water and follow steps four and five. Option 2: You can also submerge it in a sink with 50% water and 50% white vinegar.
Step 2: Scrub excess food using a soft dish brush. Excessive scrubbing or abrasion is bad for cast iron, so use a soft bristle brush to gently scrub your cast iron. Avoid using soap, detergent, abrasive sponges, or steel wool, as these can all strip your cast iron’s coating. Hot water and a soft brush will do just fine!
Before storing (preferably with the lid off, to prevent dust and moisture from settling on the cookware), you may want to coat the cast-iron skillet again with a layer of oil or shortening.

Follow the steps above to clean and remove slight stains. Soak the interior of the cookware for 2-3 hours with a mixture of 3 tablespoons of household bleach per quart of water. To remove stubborn, baked-on food, boil 2 cups of water and 4 tablespoons of baking soda. Boil for a few minutes, then use a pan scraper to loosen the food.

Place the pan upside down on the middle rack of a 400 degrees F oven. Place a baking sheet on the rack below it to catch any oil drips. Let the pan bake for 45 minutes. Repeat steps 3 and 4 several times to get a good layer of seasoning. Remember: Use just a scant amount of oil every time so you don't gum up your pan.
